Use the sell separately switch and attach a plan. Selling stays locked until you finish Stripe Connect onboarding, since you cannot charge until payments are enabled.
Yes. Each price on your plan has a trial length in days. Students get those days free before the first charge, and billing starts when the trial ends. Set it to zero for no trial.
Yes. A plan can grant your whole academy, specific courses, or a single module or lesson with the sell separately switch.
Two things are needed. First, the course must be published, not left as a draft. Second, it needs a published plan that grants access to it. Until both are true, there is nothing for a student to buy.
